Strawberry Watermelon Ice Pops
– 4 cups cubed watermelon flesh (about 1 pound, rind removed)
– 1 cup of fresh strawberries, hulled
– 2 tablespoons of honey (optional)
Directions
– Place watermelon , strawberries and honey into blender and blend until smooth.
– Pour into ice pop molds and let set over night or until frozen.
– Run the tips of the ice pops molds under warm water for 15 seconds; this will loosen the ice pops, making it easier to remove from mold.
While we were readying the mixture, we had the kiddos paint the ice pop sticks like the rind of a watermelon. Just make sure that you only paint the bottom half of the stick, and low enough, so it doesn’t come into contact with the food. Get a similar look by dipping the bottom of the stick in green food coloring.
Here’s a fun idea – use the rind of the watermelon as a drip tray. Cut rind to the size of the mold, insert the sticks through the rind by making a small slit with a knife – making sure the rind is touching the watermelon strawberry mixture.
And finally, here are some tips on how to pick the perfect watermelon:
1. Find the ‘field’ spot. This is spot the watermelon was resting on the ground. The field spot should be a yellowish creamy color.
2. Pick a dull watermelon. A shiny watermelon means it’s under ripe.
3. Knock your knuckles on the melon. A dull knock indicates a soft melon, which you don’t want. The knock should be hard and firm.
4. Pick it up and feel its weight. The melon should feel heavy for its size indicating lots of water.
5. Look for uniform shape. An irregular watermelon means that it might have received irregular amounts of water or sun, causing it to be dry.
